What's cooking good looking?!


Quick and easy and HEALTHY!!!

Dinner tonight is: (YES I can use a grill)

Grilled Chicken Kabob (from Fresh Market ready to go, just throw on grill) 

Grilled Rosemary Garlic Shrimp
     10-20 medium-large shrimp, already peeled and deveined (make life easier)
     12 in bamboo skewers
     1/4 cup finely chopped garlic, mashed to a paste with 1 teaspoon of course salt (which I don't always do)
     2 tablespoons fresh rosemary leaves, finely chopped
     3 tablespoons extra virgin olive oil
     juice of 1 lemon
     freshly grated black pepper (to taste)
In large bowl stir together garlic, rosemary, lemon juice and olive oil
Add cleaned and washed shrimp
Marinate the shrimp, covered and chilled atleast 4 hours
Soak bamboo skewers in water for 30 minutes and prepare grill
Once grill is ready thread 4-5 shrimp on each skewer. Grill shrimp on an oiled rack, set about 5 inches over flame, 3-4 minutes on each side or until just cooked thru. DO NOT OVERCOOK!
If you don't have a grill you can just throw the shrimp in a pan and saute them, they are just as good!

Grilled Zucchini 
     Zucchini (how ever many)
     Olive oil (enough to cover zucchini and some extra)
     1-2 teaspoon finely chopped garlic (fresh is best LOL)
Wash zucchini, cut off ends, slice in half longways, brush on olive oil garlic mixture, put on grill, flipping every so often, it's pretty quick..about 6-7 minutes....you should be able to make your own judgement when they are done!

For all this grill should be set on medium temp (400-500 degrees)

Note to all ladies...if you don't want to get stuck always being the one that grills don't let your man know you know how, otherwise you will get stuck always doing it!!! HAHA ; )~
